Coconut Rice & Fruit
You'll need:
2 cups Coconut Milk
1 cup  Sticky Sushi Style White Rice
1  Banana
1/3 cup  Berries (blueberry are my favorite)
1/3 cup  Pecans toasted
Soy or Almond Milk
Maple syrup


In a medium saucepan combine coconut milk and rice. Add a drizzle of oil and a dash of salt. Cook uncovered on medium/medium low heat until it reaches a boil. Stir throughout. Then reduce the heat and cook covered on low until creamy and soft. In the meantime toast some pecans on a baking sheet in the oven at 350F until they are just beginning to brown. Combine the rice with the fruit and nuts. Drizzle maple syrup on top and coat with your favorite milk alternative. Yummy!
